It used to be that soup was an everyday occurrence. Today we’re moving away from it a bit, which is a shame! They are a huge wealth of vitamins and minerals and are great for your daily diet.
In soups various ingredients are combined: vegetables, meat, groats. Soup itself is not caloric, so you can eat it to your heart’s content even on a weight loss diet. Just be careful about the amount of additives: potatoes, pasta, etc.
In addition, soups are wonderfully warming on cold days, and the vegetables present in them, such as garlic and onions, are a huge support on the way to the best possible immunity. If you have trouble motivating yourself to eat vegetables on a daily basis, it’s in soup that you can sneak them in.
Here are some suggestions for soups to prepare for lunch!
Broth is, of course, a classic of Sunday dinners and a favorite soup of really many people. This traditional Polish soup is loved not only by adults, but also by children, which is not insignificant – every mother knows how difficult it is to satisfy the culinary taste of a several-year-old.
To prepare the broth you need: one chicken or parts from it such as thighs, 2-3 carrots, 2 parsley, one large onion, a little leek and a small part of celery root, parsley, 2-3 bay leaves, allspice. Add salt, pepper, parsley for sprinkling, pasta.
Rinse the chicken, pour cold water, bring to a boil. Wash and prepare the vegetables. Peel the onion, burn it, for example, over a gas burner or in a dry frying pan. After boiling the meat, collect the resulting white scum with a spoon. Add the vegetables to the pot, as well as bay leaves, allspice and peppercorns. Reduce the temperature of the burner, cook for about an hour. After this time, add salt and parsley to the broth, and continue cooking for about 30-40 minutes. Season to taste. Serve with noodles, sliced carrots and chopped parsley.
Homemade tomato soup is a great idea for dinner.
To prepare the soup you need: 1 kg of meat for broth, 3 medium carrots, a small parsley root, a small piece of celery root, one onion, 2 grains of allspice, 2 bay leaves, salt, pepper. To this, a jar of tomato paste, 18% sour cream.
In a pot place: meat, peeled carrots, parsley root, celery root, onion. Add allspice, bay leaves, a little salt and pepper. Bring the soup to a boil. Reduce the power of the burner to minimum and cook for 90 minutes. After this time, remove the scum, fish out the meat, spices and vegetables. Add a small jar of tomato paste to the broth, and 4 tablespoons of cream. Serve tomato soup with pasta or rice, as desired.
It’s time for a proposal that may not have graced the table in your family home, but it is delicious, filling and worth trying. We are talking about zucchini cream soup.
To prepare the soup you will need: 600 g of zucchini, oil, butter, 1 onion, garlic clove, 800 ml of poultry broth, 30% cream.
In a pot melt 2 tablespoons of butter with a tablespoon of olive oil. Add the diced onion and fry it. Add garlic and sauté everything together for a while. Then add the diced zucchini, stir-fry for about 3 minutes. Pour in the broth and cook covered over moderate heat for about 20 minutes, at the end add the cream. Serve with croutons.
